Persimmon


The persimmon, also known as palo santo, is a tropical fruit of the ebenaceae. There are different varieties, having a different size and taste, among which we can include: Chinese persimmon (D. Kaki), the Japanese one (D. Lotus) and American one (D. Virginiana).

The most grown one is the Chinese persimmon. Its weight ranges between 80 and 250 grammes depending on the variety; it is red, orangish or yellowish, depending on its carotene content; and it has an orangish, sweet and juicy flesh, with a slightly tart aftertaste, depending on its tannin content.
